It is hard to find fine durum flour except by mail order. King Arthur has an excellent, though expensive fancy durum flour. In a pinch, you could use semolina such as the Bob&#039;s Red Mill brand that you can find in many grocery stores. It&#039;s not the finest ground  but it is still an excellent product. I&#039;m sure the earthy flavor so distinctive of semolina would still be there.
